Estate:  Bollinger is a great Champagne House.  The house style is strong.  It is rich, oak-aged and dominated by pinot noir.  It has a dedicated following.  The house was founded in 1829 by a German businessman named Jacques Bollinger along with his business partners Paul Joseph Renaudin and landowner Admiral de Villermont.  The "force majeure" at this house was Lily Bollinger in the both century.  She ran the company after the death of her husband for 30 years.  There was a trend at the time to change to inbox vats, but Lily held steady and continued with oak.  This policy is in effect to this day.  

The house uses very old barrels.  They have about 3,000 barrels, the oldest is 110 years.  This is the main reason for the house style.  The oxidative impact on the wines imparts bruised apple and an earthy spice tone.  The quality of Bollinger has remained high even in the face of expansion.  

Since 2012, The Special Cuvée, has a new bottle design.  It was inspired by a bottle found at the house from a bottle discovered from1846.  The bottle has a fatter base and a thin neck.  This smaller style magnum shape actually improves bottle age by 10%.


Tasting Note: Special Cuvée is the result of the delicate blending between harvest grapes and a majority of reserve wines, including some, aged in magnums for more than 15 years in Bollinger's cellars.  The Champagne has a beautiful golden hue.  The bubbles are delicate and persistent.  On the nose, the fruit is ripe.  There are hints of roasted apples, baking spices, and peach accents.    On the palate, warm brioche, walnuts, pear and baked peaches.  The bubbles are pure velvet.  The Special Cuvée can be enjoyed now or it can be cellared.  Serving temperature between 50° and 53°.
