Fallot Mustard Mill has been an independent, familyowned Burgundy company since 1840. A limestone region with dense woodlands, Burgundy’s terrain is ideal for the cultivation of particularly strong and biting seeds. As a land of vineyards, it was always well located to furnish the increasingly numerous mustard makers in and around Dijon with new wines and vinegar. It did not take very long for mustard to become a real tradition in Dijon, where its manufacture was governed by a decree on August 10, 1390.
In addition to their outstanding production facilities, Fallot has also maintained the expertise of the artisan mustard maker. Today, in Beaune, anxious to maintain both quality and tradition, Fallot adheres to the techniques of the old craftsmen mustard makers in both selection of the finest seed and the use of stone mills to grind the grains. Traditional mill stones avoid overheating the seed, which then retains all of the flavor and bite of the seed for an exceptionally long time.
Not surprisingly, Fallot’s mustards are loved by chefs and gourmands worldwide.
