Estate: This has been an established estate since the 16th century. In 1980 the Benau family purchased the property. They would harvest the fruit and sell it to the local co-op. In 1999, Juliette decided to take the fruit from the best plots and bottle it for the first time. Only the highest quality wines are put into the bottle on the insistence of Juliette.
The grapes are hand harvested, and hand sorted two times, once in the vineyard and again on the sorting table. Vinification is for 7 months sur lie with indigenous yeast.
This is an extremely special cuvee. It is the first vintage of this style for Juliette. What makes this wine extremely unique is that the wine has been aged in neutral barrels in the Mediterranean Sea. Only 4 barrels have been placed in 46 feet of water at a constant temperature of 48 F. The constant movement of the sea allows for a natural style of batonnage or lees stirring. The result is pretty special.
