Bollinger is a great Champagne House. The house style is strong. It is rich, oak-aged and dominated by pinot noir. It has a dedicated following. The house was founded in 1829 by a German businessman named Jacques Bollinger along with his business partners Paul Joseph Renaudin and landowner Admiral de Villermont. The "force majeure" at this house was Lily Bollinger in the both century. She ran the company after the death of her husband for 30 years. There was a trend at the time to change to inbox vats, but Lily held steady and continued with oak. This policy is in effect to this day.
The house uses very old barrels. They have about 3,000 barrels, the oldest is 110 years. This is the main reason for the house style. The oxidative impact on the wines imparts bruised apple and an earthy spice tone. The quality of Bollinger has remained high even in the face of expansion.
