Pierre Fort was trained by Didier Dagueneau and learnt to master the art of working the Chenin variety.
Originally from Roquetaillade Pierre took over the family vineyards mostly composed of Chardonnay, Pinot-Noir, Mauzac (the local variety) and Pinot-Noir.
The village of Roquetaillade is on the slope of the pyrene mountain at about 500 meters of altitude. Half way between the mediterranean and the Atlantic it benefits from both climates and cooler conditions than the restaurant of Languedoc-Roussillon.
The Limoux A.O.C Chardonnay is the only appellation in France that requires to use a minimum of 10% of New French oak.
Pierres works bio-dynamically and organically and knows his vineyards like the back of his hand.
Pierre and his wife Marie established themselves as some of the most recognised winemaker in his region.
His wines tends to be very delicate, fresh and crisp.
You would not guess it's from Languedoc if you tried in a blind Burgundy tasting.
