Domaine Oudin is a small estate located in the small town of Chichée. Chichée is located just south of Chablis. In 1988, couple Jean-Claude and his wife Christine relocated to this tiny suburb. They took over Christine's fathers two hectare estate. They are no longer making the wine but their daughter Nathalie has taken the reins and she is doing her parents proud. The domaine currently consists of 8 hectares. The majority of the plots have optimal aspect, facing south and south-west. The vines are located on the hilltops surrounding the town of Chichée.
Pruning Method: Double Guyot. Soil: Limestone with southern exposures. Age of vines: 65 years old. Yield: 45hl/ha. Vinification Method: Grapes are hand harvested and gently pressed. Only natural yeasts are used and the wine is fermented in temperature controlled stainless steel tanks. The wine rests on the lees in tank for a year or more before it is bottled. The wine is fined with bentonite and lightly filtered. Minimal sulfites are added.
