2014 Brut Rosé Sparkling Wine: (62 cases) Hand harvested, hand disgorged, hand bottled. Another great wine made in a partnership with Norm Yost of Flying Goat Winery in Lompoc. We grow the grapes, Norm makes the bubbles. 100% 115-clone pinot noir, farmed and picked specifically to make Method de Champenoise. Bright apple and hints of unripe cherry add fruit to a nose that’s more about acid and minerality than fruit. The young wine smells very similar to a great, young vintage Champagne than most domestic bubblies. The focus for the Clos Pepe Estate Brut Rosé is making a bone-dry, Champagne-inspired sparkling wine that will be dry, complex and delicious at release, and will continue to develop layers of doughy, mineral complexity as it ages over the next decade.
